What's the difference between "beobachten" and "schauen/anzusehen?"
Is it wrong to say, "Ich habe keine Zeit zu viele Filme jedoch zu beobachten?"
yeah, as everyone said, beobachten is more for watching/observing something in the environment, almost studying it. most people would not say your example, it may not be completely wrong, but people would look at you weird. sehen is the best option anytime you want to use TV/Video, it's easy because it's in the word (fernsehen). hope it helps!

In the official definition of the word "beobachten" it is described more as "observing" than "watching". "Beobachten" means a targeted, attentive observation of objects, phenomenons or processes and might even imply the usage of tools (e.g. binoculars, ..)
Some small corrections:
Ich habe jedoch keine Zeit (all) zu viele Filme zu schauen/anzusehen.
"beobachten" would be rather to stalk or to monitor.
- Marie ist im Krankenhaus zur Beobachtug (Marie is in the hospital for monitoring)
- Ich werde meinen Nachbarn beobachten, ich glaube er stiehlt meine Äpfel. (I'll watch my neighbor, I think he's stealing my apples).
